The wines of the Cambis Estate, both in red, white and rosé feed on the imprint of their terroir: the Berlou shale. Annick and Martin Perolari, mother and son, invite you on an olfactory, taste and tactile sensory journey in each of their vintages.
The vines, in the schist hillsides of Berlou, are planted with traditional grape varieties from the Saint-Chinian AOP and the communal appellation Saint-Chinian Berlou: Black Carignan, Black Grenache, Cinsault and Syrah, White Grenache, Vermentino, Roussanne and Viognier. These grape varieties express the beautiful minerality of this emblematic terroir of the Saint-Chinian appellation.

The creation of the Cambis estate in 2002 was the result of a meeting, that of a woman, Annick Perolari, and an exceptional terroir, Berlou. In 2004, following the acquisition of 12 hectares of plots and a viti-œnology training in his pocket, Annick developed his first vintages. Since 2016, Son Martin has been in charge of the estate.
